The restaurant industry continues to grapple with notoriously thin profit margins, high turnover rates, and a patchwork of management tools that don’t play well together. Founded in 2021 by Irish entrepreneur Conor Sheridan, who previously co-founded the Mad Egg restaurant group, Nory has built an AI-powered operating system designed specifically for the unique demands of hospitality. The company just announced a $37 million Series B round led by Stockholm’s Kinnevik, intended to help it scale its technology across Europe and North America.
This latest funding builds on previous rounds, including a $7 million seed in 2022 co-led by Triple Point Ventures, and a $16 million Series A in 2024 led by Accel, bringing total investment to $63 million. With this capital, Nory is gearing up for rapid expansion and plans to deepen its AI capabilities, increase integrations with point-of-sale and delivery platforms, and develop autonomous AI assistants to further streamline restaurant operations.
Sheridan’s inspiration for Nory came directly from his time working in restaurants, where quick decisions often have to be made in fast-paced, information-scarce environments. His goal with Nory was to create a platform that moves beyond siloed software, digitising essential restaurant functions while offering predictive insights to improve decisions around staffing, inventory management, and customer satisfaction, and improving restaurant phone response rates.
Nory says its AI engine can forecast daily demand with up to 95% accuracy, enabling restaurants to better align labour and supplies, reduce waste, and control operating costs. These factors are critical in an industry where even small inefficiencies can significantly impact the bottom line.
Positioning itself as an all-in-one hospitality operating system, Nory unifies scheduling, inventory control, staff performance tracking, and demand forecasting in a single platform. This contrasts with established competitors such as HourWork, Restaurant365, Tolstoy, Gastromatic, and SynergySuite, which typically offer fragmented solutions. Nory’s technology continually learns from operational data to fine-tune predictive models and enhance profitability.
Sheridan envisions Nory helping hospitality businesses overcome labour shortages and operational challenges by providing technology that supports sustainable growth, improves employee retention, and reduces friction in day-to-day processes.
